The reason Jones didn’t want Bryant to switch agent is because he has a very cozy relationship with Bryant’s former agent Eugene Parker.
They go way back to the days when Jones signed Deion Sanders. He is very comfortable with Parker not so much with Hov.
Now with that being said, it appeared that Parker wanted Bryant to hold out for a better deal and it was Bryant who wanted a deal done ASAP.
Sources indicate Bryant wanted a deal done with the #Cowboys asap, but his former agent, Eugene Parker, felt the team was lowballing Bryant.

Parker wasn't interested in having his name associated with a deal that was below what he felt Bryant's market value was, per sources.

One source indicated Jerry Jones may be reluctant to do a deal for Dez with Roc Nation Sports. We shall see.

According to ESPN, Jerry Jones advised Bryant not to make the switch.
It isn’t known if Roc Nation will handle the contract negotiations or if someone from CAA will. Why Dez is in such a rush to get a deal done? Could be a few reasons, but that is all speculation for now.
